Namaste, welcome to this new video of Sattva Ayurveda’s Kitchen It is always great to be with you again Today we will learn how to make a classical ayurvedic recipe, the kitchari. What is kitchari ? This the well known detox dish from the ayurvedic cooking. It is the combination of rice and dehulled mung beans cooked together with spices. This will help detoxification of the body Let’s have a look at all the ingredients we will need to make the kitchari 2 cups of basmati rice, 1 cup of dehulled mung beans, 2 tablespoons of oil, either colza oil, sunflower oil, even groundnut oil, one and half teaspoon salt, one third teaspoon of red chili powder, one teaspoon of turmeric powder, one teaspoon of mustard seeds, 4 cloves, one third teaspoon of fenugreek seeds, half a teaspoon of cumin seeds, a small potato, a red onion, a piece of fresh ginger. Start with roasting the seeds in oil, poor the oil and let it get warm enough, then add the mustard seeds, cumin seeds, cloves and fenugreek seeds, let them roast together until they start bursting Once the seeds have become slightly brown you can add rice with dehulled mung
beans which have been washed with water before. Let the rice and mung roast in oil for a minute to make sure the grains properly

separate. Then you can add spices : turmeric powder, red chili powder, salt, and the chopped
potato and onion, finally the skinned and crushed piece of ginger Mix all the ingredients together, poor water in the pan, twice as much as the volume
of rice, the rice has to be fully covered by the water, then bring it to a boil. The kitchari is boiling now, cover it and let it cook on low heat for about 20 minutes. As you can see this is a very simple and fast recipe, you can have kitchari as an
evening meal since it is very easy to digest, you will not feel heavy before going to
bed. You can also have it for lunch with some side vegetables dish, you can also add vegetables in the kitchari if you want, carrots, cauliflower, turnip, beetroot, etc… there are plenty of ways. However the traditional detox recipe for the kitchari is when you cook it without
