Hello, welcome in this new video of Sattva Ayurveda’s Kitchen. Today I’ll show you a new recipe where we will be using mung bean, it is the whole mung bean soup. Let’s have a look to the ingredients list and let’s start with the cooking ! For this soup we will need 2 cups of whole mung beans which have been soaking in warm water for a few hours. Fresh chopped coriander, a small chopped tomato, the juice of half a lemon, 1 and half teaspoon of salt, 4 and half teaspoons of brown sugar, 4 cloves, half a teaspoon of fenugreek seeds, 1 teaspoon of mustard seeds, 1 teaspoon of cumin seeds, 1 teaspoon of turmeric powder, 2 teaspoons of coriander powder and ⅓ teaspoon of red chilli powder. We will start cooking the mung beans in water first, they have to boil for about 25 minutes. While the beans are boiling, we are going to brown the seeds in a pan with 3 tablespoons of oil. Then add the cloves, mustard seeds, cumin seeds, fenugreek seeds, and a pinch of asa foetida, let them brown in the oil. When they are brown, add the chopped tomato and let it cook together. Tomatoes have been fried with the seeds for about 1 and half minutes, turn the gas off and keep it on the side. Once the mung beans are cooked, you can add the brown seeds and tomatoes in the saucepan. Pour some of the hot liquid in the pan to mix it properly and then pour everything back in the mung beans soup. Add spices and salt for seasoning, sugar, turmeric, red chilli, and coriander powder. Mix everything together and let it boil gently on medium heat for about 20 minutes. The soup has boiled for 15 minutes, add now the final ingredients, lemon juice and chopped fresh coriander (don’t forget to wash it first). The dish is now ready to be served. This recipe is finished now, we can taste this delicious mung bean soup. You can have it with a bit of rice, or some chapatis. If you don’t have time you can have a couple of slices of toasted brown bread.
